Today the weather is rainy, so I need comfort food! These healthy sweet potato fries certainly fit the bill! They are packed full of goodness, taste delicious and seriously fill you up. They also go perfectly with pretty much anything and you could easily make them into chunks and throw into a salad if you don’t want to have chips.
Everyone loves sweet potato fries. I remember at Uni we had a cafe which stopped selling them and there was a successful petition to get them back on the menu – that’s how good they are! There is something about them which means they taste amazing, I think it’s the fact they are sweet – the perfect mix of sweet and savory.
I would go so far as to say that these are now my favourite way to eat potato – and they’re not even proper potato! This is a pretty big statement from me, as there was a time in my life that I would only eat mash potato. Well I say only, I mean mash potato featured in every single one of my meals, usually along with baked beans, sometimes gravy and, of course, ketchup. Mash potato is still a close second(especially the sweet potato variety), but I have to say, these have stolen my heart. (Sorry mash, I promise we can still be very close friends).
My favourite thing to pair them with is an avocado dip. Delicious! You may have noticed by now, but I am a huge fan of avocado. If avocado was a rock star, I would be that obsessive fan that followed it around to every gig in the hope that it would recognise me and sign something. Avocado is incredibly good for you and it tastes amazing. More than that, it goes with literally everything (as I’m sure you’ve realised) so you always know that buying an avocado isn’t going to be a waste of money.
This recipe goes perfectly with my sweet potato burgers! Sweet potato galore!
- 4 sweet potato
- Some olive oil (I use lime for a tasty twist)
- Sprinkle of chilli flakes
- Seasoning to taste
- Heat your oven to 200 degrees (electric oven) and preheat a baking tray
- Skin your sweet potato
- Cut them into chip/fry shapes
- Place them in the preheated baking tray and cover lightly with oil
- Put them in the oven until crispy
