It’s official, I have found my favourite summer dish. Allow me to present: perfectly creamy raw zoodles with avocado. This is the freshest and lightest “pasta” dish I have ever had, yet it still left me feeling incredibly satisfied.
When I was younger I lived off pasta, it always left me feeling comforted and full up. I still love pasta, but I thought it would be pretty cool to check out an alternative. Raw zoodles have been filling up my instagram newsfeed for ages, and I wanted to get involved in the action.
Avocados are one of my favourite foods. They are nature’s cream, literally anything you put them in/with turns out luxurious. The lemon and mint really complement the flavour in this dish, they just make it taste so heavenly and light – it’s basically summer in a bowl.
Zoodles are made from courgettes (zucchini) so you don’t need to boil them. If you don’t like the idea of eating them completely raw you can heat them up by frying them – this recipe does also taste amazing hot, just put all of it in a pan and heat through. I made them using a spiralizer, if you’re trying to get more veg into your diet I really recommend buying one, you can completely revolutionise how you use vegetables!

- 2x courgette
- 1 1/2 avocado
- 1 lime - juiced
- 1 handful mint
- 1/2 cup walnuts
- 1 cup water
- 1 handful spinach
- 2 handful tomato
- Add all of the sauce ingredients (apart from the water) into a food processor
- Blitz until combined
- Slowly add in the water until the sauce is the desired consistency
- Spiralise your courgettes
- Assemble it all in a bowl and mix the zoodles through with the sauce
- Add some chilli to give this a dish an extra kick.
