This roasted tomato soup recipe is going to stay with me for life for two reasons: 1) it tasted amazing and 2) I burnt my arm whilst making it and so will have a constant reminder of that fateful soup. I’m not too bothered though, as there are definitely worse things I could be reminded about.
It’s definitely moving towards Summer here and with that is coming beautiful tomatoes. I love tomatoes, they’re amazing, very good for you and they taste awesome. When I was younger I was obsessed with ketchup (I could eat it on ice cream, but I think that is a story for another time!), but yet I “hated” tomatoes. Now I’m older (and wiser) I know the value of summer tomatoes; and boy are they worth the long winter wait.
